Memasak sayuran jenis ini terlalu lama dapat menyebabkan keluarnya bau yang tidak menyenangkan. Semakin lama sayuran jenis ini dimasak, maka baunya semakin kuat. Bau itu adalah hidrogen sulfida hasil reaksi kimia saat dilakukan pemanasan. Bahkan dianjurkan untuk memasak sayuran ini cukup lama, hanya sampai terlihat layu saja, lalu matikan api.
Tips memasak sayuran ini sudah saya terapkan sendiri saat memasak sop ayam. Kubis saya masukkan paling belakang saat buncis dan wortel sudah dimasak 2-3 menit. Setelah itu kubis dimasukkan lalu diaduk sampai merata terkena air mendidih. Setelah 2 menit, kubis akan layu dan api akan saya matikan. Dengan cara memasak ini, rasa dari sop ayam sangat berbeda dengan ketika kubis dimasak lebih lama. Aroma dan rasanya lebih segar. Tidak percaya? Buktikan sendiri. Selamat memasak!
